Mader’s started serving porterhouse steaks and steins of beer when they were only 20 cents and three cents. The tables and chairs were rough and wobbly upon opening in 1902, and a single fan whirled from the hot tin ceiling.
Prohibition struck in 1920, and Celia Mader, Charles Mader’s wife, decided to switch gears to German cuisine: Sauerbraten, Wiener Schnitzel, and Pork Shank. Celia’s adaptive mind kept Mader’s open until April 7th, 1933, when Prohibition ended.
Mader’s continues to be a family-owned and operated business, even with 100+ years of experience. A full-scale model of the original storefront can be viewed in “The Streets of Old Milwaukee” exhibit at the Milwaukee Public Museum.

Dean, a third-generation Carson, is responsible for satisfying Carson’s patrons into the future. The goal stays as true as the recipes; to give customers the same great taste every time they visit.
